To create an easy lamb mince hot pot recipe, that’s bursting with flavour, you will need these ingredients: 

  • 2 tbsp balsamic vinegar (Sulphites)
  • 3 x carrot
  • 2 tsp cornflour
  • 1 garlic clove
  • 500g lamb mince
  • 1 handful of fresh mint
  • 1 brown onion
  • 300g fresh peas
  • 3 large white potato
  • 1 beef stock cube (Celery)
  • 2 tbsp tomato puree
  • 2 tsp dried thyme

Quick Lamb Mince Recipe Instructions

You can cook this delicious lamb mince recipe in just 45 minutes! To get started follow these easy instructions:

  1. Preheat the oven to 240C / fan 220C / gas mark 8 and boil a kettle. Dissolve the stock cube in a jug with 250ml boiling water. Thinly slice the potatoes, place into a medium saucepan and cover with salted boiling water. Par-boil for just 7-8 mins, until slightly softened but not cooked through, then drain and steam dry.
  2. Meanwhile, heat a large saucepan with 2tsp oil on a medium-high heat. Add the lamb mince, cook for 5-7 mins, stirring often, until brown and turning crisp at the edges. Season with sea salt and black pepper.
  3. Peel and finely dice the onion, peel and dice the carrot into 2cm pieces, crush or finely grate the garlic. Roughly chop the mint leaves.
  4. Add the onion, garlic, carrot and just 1 tsp thyme to the lamb mince, cook for 5 mins, until veggies soften, then add the tomato puree and cornflour, cook for a further 30 seconds, then add the stock and vinegar. Add a pinch of fresh mint. Simmer for 5 mins until thickening.
  5. Pour the lamb mixture into an ovenproof dish. Arrange the potatoes over the top. Drizzle with 3 tsp oil and sprinkle with remaining dried thyme, season with sea salt and black pepper. Bake for 20 mins, until the potatoes are golden.
  6. Re-boil a kettle. When the hot pot is almost ready, place the peas and remaining chopped mint leaves into the saucepan from earlier, cover the peas with boiling water and boil for 4 mins then drain.
  7. Serve the hotpot with the minted peas alongside.

For a light and spicy lamb minced burger recipe, you will need these ingredients: 

  • 2 tbsp apple cider vinegar (Sulphites)
  • 1 baby cucumber
  • 1 tsp ground cumin
  • 2 tsp harissa paste
  • 300g lamb mince
  • 1 handful of fresh mint
  • 1 red onion
  • 400g baby white potatoes
  • 120g baby plum tomatoes
  • 80g coconut yoghurt

Instructions on How to Cook a Lamb Mince Burger

Being able to cook this dish in just 30 minutes, means you can focus on other important tasks you may have to do. To start, follow these seven simple instructions:

  1. Preheat the oven to 200C / fan 180C / gas mark 6. Cut the baby white potatoes into wedges. Place the potatoes in a saucepan with a pinch of sea salt, cover with boiling water and boil for 10 mins.
  2. Drain the potatoes. Place in a large bowl with 1/2 tbsp oil, the harissa paste (to taste) and a pinch of sea salt. Coat the potatoes in the harissa then place on a baking tray in the oven, cooking for 15-20 mins, until turning golden.
  3. Meanwhile, in a bowl, mix the lamb mince with the ground cumin and a pinch of sea salt and black pepper. Form the mince into two burger shapes, around 1cm thick.
  4. Using a peeler, slice a few long, thin strips from the baby cucumber and set aside for the burgers. Make the salad; dice the red onion (use as much as desired), cherry tomatoes and the remaining cucumber. Place in a bowl and mix with three-quarters of the apple cider vinegar and 1/2 tbsp olive oil.
  5. Heat a frying pan (or griddle pan) on a medium-high heat and fry the burgers for 4-5 mins on each side until cooked through. Leave to rest for a few minutes.
  6. Thinly slice the fresh mint, discarding the stalks. Mix the coconut yoghurt with the mint and the remaining apple cider vinegar. Season with sea salt and black pepper.
  7. Place the burgers on two warm plates, then top with the mint yoghurt and cucumber ribbons. Spoon the salad and harissa wedges alongside.

Middle Eastern Lamb Mince Ingredients

To pack this Middle Eastern lamb mince full of flavour, the ingredients you will need are: 

  • 2 aubergine
  • ½ tsp ground cinnamon
  • 2 tsp ground cumin
  • 40g kale
  • 1 garlic clove
  • 300g lamb mince
  • 1 brown onion
  • 2 tsp smoked paprika
  • 200g passata
  • 1 pomegranate (use half)
  • 1 tbsp Belazu sundried tomato paste
  • 4 tbsp tomato puree
  • 80g coconut yoghurt

Instructions on How to Cook Middle Eastern Lamb Mince

To make this healthy recipe using lamb mince, follow our seven simple steps. 

  1. Preheat the oven to 220C / fan 200C / gas mark 7 and boil a kettle. Cut the aubergines in half lengthways and lay on a baking tray, flesh-side up. Slice diagonally into the aubergine, 1cm deep, to create a crisscross pattern. Drizzle 1/2 tsp oil over the aubergine halves; sprinkle with a pinch of salt. Cook in the oven for 20-25 mins, until soft.
  2. Dice the onion. Finely chop the garlic. Heat a medium-sized pan with 1/2 tsp oil on a medium heat, and cook the onion for 5 mins. Add the garlic, cinnamon, smoked paprika, cumin and lamb mince. Stir. Cook for 10 mins, until the lamb mince is browning.
  3. Meanwhile, cut the pomegranate in half and remove the seeds. Reserve for later.
  4. Add the sundried tomato paste, passata, tomato puree and 150ml boiling water to the pan. Season with sea salt and black pepper. Roughly tear the kale and add to the pan. Simmer for a further 10 mins to reduce the sauce.
  5. Add the coconut yoghurt and 2-4 tbsp cold water to a small bowl. Stir well until it reaches a drizzling consistency.
  6. Remove the aubergines from the oven. Scoop out most of the flesh from the middle using a spoon and fork. Add the aubergine flesh to the lamb mince and mix.
  7. To serve, place the aubergines on warm plates and top with the lamb mince. Garnish with a drizzle of yoghurt and scatter with pomegranate seeds.
