Ingredients

Creating a healthy chicken and courgetti recipe, with lots of delicious flavours, is simple. To start you will need these ingredients: 

  • 2 free-range chicken breasts
  • 300g courgette
  • 2 garlic clove
  • 1 lemon (use half)
  • 1 red onion
  • 2 tbsp basil pesto
  • 15g pine nuts
  • 80g baby spinach
  • 40g sundried tomatoes

Quick Courgetti Recipe Instructions

Taking under 30 minutes to cook and prepare, you can have this healthy courgetti recipe on your table in just 25 minutes. To get started follow these easy instructions:

  1. Remove the ends of the courgettes, but leave the skin on. Prepare the courgetti noodles using a peeler and slice the courgettes into long thin strips (or use a julienne peeler or spiralizer if you have one).
  2. Finely slice the red onion and finely chop or crush the garlic. Roughly chop the sundried tomatoes. Thinly slice the chicken.
  3. Heat a dry medium-sized pan on a medium heat and cook the pine nuts for 2-3 mins until toasted. Remove from the pan and set aside.
  4. Heat the same pan with 1 tbsp oil on a medium heat and cook the onion for 3 mins. Then add the chicken and garlic to the pan, season with sea salt and black pepper and cook for 8 mins. 4. Add the spinach and sundried tomatoes to the pan and cook for 2 mins or until the chicken is cooked through and the spinach has wilted.
  5. Then add the courgetti to the pan and stir through the basil pesto and the juice from the half lemon. Cook for a further minute.
  6. Spoon the chicken pesto courgetti into two warm bowls and sprinkle over the toasted pine nuts.

  • 300g beef mince
  • 2 x carrot
  • 100g celery (Celery)
  • 300g courgette
  • 2 garlic clove
  • 2 tsp dried Italian herbs
  • 1 red onion
  • 1 handful of fresh flat-leaf parsley
  • 200g passata
  • 30g pine nuts
  • 1 tbsp Belazu sundried tomato paste

Instructions on How to Cook a Healthy Courgetti Recipe

Not only is this courgetti recipe healthy and delicious, it only takes 30 minutes! With less time cooking, you can spend more quality time with the ones you love. To start, follow these six simple instructions:

  1. Finely dice the onion and garlic. Finely slice the celery. Roughly chop the parsley.
  2. Heat a medium pan with 2 tsp oil on a medium heat. Add the onion and celery, then cook for 5 mins. Add the garlic and beef and cook for 10 mins, until turning golden (break the mince up in the pan with a spoon).
  3. Add the passata, tomato paste, dried herbs and half the parsley to the beef. Cook for a further 10-15 mins, until the sauce has thickened. Season with sea salt and black pepper.
  4. Meanwhile, make the courgetti and carrot spaghetti. Peel the carrot and, using a peeler, slice it into long, thin strips (or use a julienne peeler or spiralizer if you have one). Repeat with the courgette, but leave the skin on and remove the ends.
  5. Heat another large frying pan without oil. Toast the pine nuts for 2-3 minutes, then remove to cool. Reheat the pan with 1 tsp oil on a medium heat. Cook the vegetable spaghetti for 1-2 mins, until slightly softened. Season with sea salt and black pepper.
  6. Serve the courgetti and carrot spaghetti topped with the beef ragu. Sprinkle with the pine nuts and remaining parsley.

  • 2 x carrot
  • 300g courgette
  • 2 garlic clove
  • 80g dried brown lentils
  • 120g chestnut mushrooms
  • 200g passata
  • 20g pine nuts
  • 2 tbsp Belazu sundried tomato paste
  • 1 handful of fresh thyme
  • 180g baby plum tomatoes

Instructions on How to Cook a Healthy Courgetti Recipe

To make this healthy vegan recipe, follow our seven simple steps. 

  1. Boil a kettle. Rinse the lentils, then place in a saucepan with 300ml boiling water. Bring to the boil, then reduce the heat and place a lid on the pan. Simmer for 20-25 mins, until tender (the water should be absorbed).
  2. Meanwhile, finely chop or crush the garlic. Peel the carrots and finely dice. Finely slice the mushrooms. Halve the tomatoes. Remove the thyme leaves from their stalks.
  3. Heat a large saucepan with 1 tbsp oil on a medium heat. Add the garlic and carrots and cook for 5 mins. Add the mushrooms and tomatoes to the pan and cook for a further 5 mins, until all the vegetables have softened.
  4. Add the passata, tomato paste and thyme leaves to the pan. Cook for a further 5 mins, adding a little water if the sauce is too thick. Season with black pepper.
  5. Meanwhile, peel the courgette into ribbons. Slice the ribbons into long, thin strips (or use a julienne peeler or spiralizer if you have one).
  6. Heat a dry frying pan on a medium heat. Toast the pine nuts for 1 min, then remove and set aside. Keep the pan on the heat and add 1/2 tbsp oil with the courgetti. Cook for 1 min, until the courgetti has softened slightly.
  7. Stir the lentils through the bolognese. Serve the bolognese over the courgetti, sprinkled with the toasted pine nuts.
