Chef Thea’s recipe turns your already brilliant start to the day into a new flavour sensation, thanks to warming chai tea-style spices (think maple, cinnamon and nutmeg).

You will need…
- 40g Mindful Chef Bircher Muesli
- 100ml water or oat milk
- 4 dates (stones removed)
- 1 banana
- 1 tsp ground nutmeg
- 1 tsp ground cinnamon
- Handful of pecan nuts
- 1 tbsp maple syrup
How to make it…
1. Add 40g Mindful Chef Bircher Muesli into a bowl or jar, along with 1 tsp ground nutmeg, 1 tsp ground cinnamon and 100ml water (or your choice of milk). Stir.
2. Soak in the fridge overnight.
3. The next day, loosen with a little more water (or milk) if needed.
4. Slice the banana. Halve the dates.
5. Top with the sliced banana, dates, pecan nuts, and a drizzle of maple syrup.
