Ingredients

To create this healthy fish pie recipe, you will need: 

  • 200ml cashew cream (Nuts)
  • 2 tsp cornflour
  • 520g fish pie selection (Fish)
  • 1 leek
  • 1 lemon
  • 1 tbsp dijon mustard (Mustard)
  • 4 large white potato
  • 80g baby spinach
  • 1 vegetable stock cube (Celery)
  • 20g cashew parm cheez (Nuts)
  • 300g peas

Easy Fish Pie Instructions

Our fish pie recipe takes six simple steps: 

  1. Preheat the oven to 220C / fan 200C / gas mark 7. Boil a kettle. Dice the potatoes into small cubes, place in a saucepan and cover with lightly salted boiling water. Simmer for 20 mins, then drain and mash with sea salt and black pepper.
  2. Meanwhile, slice the leek into half-moons. Heat a large frying pan with 4 tsp oil on a medium-high heat. Add the leek and cook for 5 mins, until softening.
  3. In a jug, mix the cornflour with 1 tbsp cold water. Add the stock cube and 125ml boiling water; mix to dissolve. Add the cream, stock, mustard and spinach to the softened leek; stir to wilt the spinach. Gently stir in the fish and simmer for 5-7 mins.
  4. Zest the lemon, then cut into 6 wedges. Add 2 tsp zest and the juice from 1 lemon wedge to the pie filling. Transfer the mixture to an ovenproof dish. Top with the mash and cheez. Bake for 15 mins, until golden.
  5. Half-fill a large saucepan with boiling water, then add the peas. Boil for 1-2 mins, then drain.
  6. Serve the fish pie with the peas and remaining lemon wedges.

  • 200ml cashew cream (Nuts)
  • 1 tbsp dulse seaweed flakes
  • 2 garlic clove
  • 180g green beans
  • 1 lemon
  • 1 tsp dijon mustard (Mustard)
  • 1 tbsp nutritional yeast
  • 2 large white potato
  • 1 shallot
  • 80g baby spinach
  • 400g banana blossom

Easy Fish Pie Instructions

In six steps you will have made this hearty fish pie recipe with a Mindful Chef twist. To start, follow these simple instructions:

  1. Preheat the oven to 220C / fan 200C / gas mark 7. Thinly slice the potatoes, add to a bowl with 1 tbsp oil, and season with sea salt and black pepper. Meanwhile, thinly slice the shallot. Finely chop or crush the garlic. Drain the banana blossom and thinly slice, discarding the husk. Quarter the lemon.
  2. Heat a large pan with 1 tbsp oil on a medium heat. Cook the shallot for 3 mins, until softening. Add the garlic and cook for 2 mins, then stir in the banana blossom and seaweed. Cook for a further minute.
  3. Add the cashew cream, mustard, nutritional yeast, a squeeze of fresh lemon juice and the spinach. Season with sea salt and black pepper.
  4. Pour the pie mix into an ovenproof dish. Fan the sliced potatoes around, then place in the oven for 30-35 mins, until golden brown.
  5. Meanwhile, boil a kettle. Trim the beans, add to a pan of salted boiling water and cook for 6 mins.
  6. Serve the pie with the beans and lemon wedges.

Our coconut fish pie with sweet potato mash has all the decadence of a classic fish pie, but with a Mindful Chef twist. In this recipe we use sustainably sourced fish, replace heavy cream with creamed coconut, and make our airy mash from vitamin A-rich sweet potatoes.

Provide a healthy fish dish everyone can enjoy with these ingredients:

  • 2 tsp cornflour
  • 60g creamed coconut (Sulphites)
  • 2 x 150g fish pie selection (Fish)
  • 1 leek
  • 2 tsp wholegrain mustard (Mustard)
  • 1 tsp smoked paprika
  • 1 handful of fresh flat-leaf parsley
  • 40g baby spinach
  • 300g sweet potato
  • 90g green beans

Instructions

Creating this easy fish dish can be done in just over five steps. Try it for yourself by following our instructions: 

  1. Boil a kettle. Remove the creamed coconut from the sachet and dissolve in a jug with 150ml boiling water. Peel the potato and chop into 2cm pieces. Trim the beans. Thinly slice the leek, removing the root end. Roughly chop the parsley.
  2. Place the potato in a saucepan, cover with boiling water and add a pinch of sea salt. Simmer for 5 mins, then add the beans and simmer for a further 5 mins. Heat a medium pan with 2 tsp oil on a medium heat, then fry the leek for 5 mins.
  3. Pour 1 tbsp creamed coconut into a bowl and mix with the cornflour to form a smooth paste. Add the remaining creamed coconut to the leeks along with the cornflour mix, paprika and mustard. Simmer gently for 5 mins, until the sauce thickens. Meanwhile, preheat the grill to high. Stir the fish and spinach into the leeks. Place a lid on the pan and simmer for a further 5 mins, until the fish is cooked through. Stir in half the parsley; season with sea salt and black pepper.
  4. Drain the beans and potato. Set aside the beans and keep warm. Mash the potato.
  5. Transfer the fish pie mix to an ovenproof dish. Spoon over the mash. Place under the grill for 5 mins.
  6. Serve the fish pie with the beans. Scatter over the remaining parsley.
