First up is a delicious sirloin medallion steak and potato dish. This healthy beef recipe is a scrumptious Hawksmoor special perfect to make Dad feel special this Father’s Day.

Hawksmoor Sirloin Medallion Steak and Potato Recipe Details

A juicy sirloin medallion, rich and tender, meets British asparagus, heritage tomatoes and potatoes, scattered with fresh-cut herbs. To finish? Silky homemade peppercorn sauce. Delicious. This healthy beef recipe is a great one for two people, but you can make it a whole family meal by simply doubling ingredients or viewing the 4 person recipe. Recipe Ingredients

Here’s what you’ll need to create this delicious masterpiece you’ll want to enjoy again and again. Notice we’re gluten-free, dairy-free, and stodge-free! It’s just good, easy to find ingredients and delicious flavours here. 

  • 140g asparagus
  • 1 tbsp balsamic vinegar 
  • 200ml cashew cream 
  • 2 garlic clove
  • 1 handful of fresh mint
  • 1 tbsp dijon mustard
  • 1 handful of fresh flat-leaf parsley
  • 1 shallot
  • 1 beef stock cube
  • 180g heritage cherry tomatoes
  • 330g jersey royal pearls
  • 2 sirloin steaks

Cooking Instructions

This recipe is nice and simple. Soon you’ll have a new favourite recipe Dad is sure to enjoy! Here’s what you need to do to create this scrumptious Hawksmoor dish you’ll never forget.

  1. Boil a kettle. Dissolve the stock cube in a jug with 50ml boiling water. Place the potatoes in a saucepan with a sprig of mint, cover with salted boiling water and boil for 20 mins, until cooked through.
  2. Slice half the shallot into thick rings; finely dice the other half. Finely chop the garlic. Remove the mint and parsley leaves from their stalks, then finely chop half the herbs (keep the rest whole, discarding the stalks). Trim the asparagus. Halve the tomatoes.
  3. Make the salad. To a bowl, add the tomatoes, shallot rings, chopped herbs and 1/2 tbsp olive oil. Season with sea salt and black pepper; mix.
  4. Heat a frying pan with 1/2 tbsp oil on a medium-high heat. Season the steaks with sea salt and black pepper, then place in the pan. Cook until golden brown (as a guide: 5-6 mins on each side for medium-rare or 8-10 mins on each side for well-done). Remove the steaks from the pan and leave to rest on a plate.
  5. Meanwhile, fill a saucepan with salted boiling water. Boil the asparagus for 4 mins, then drain. Make the sauce. Reheat the saucepan with 1 tbsp oil. Soften the garlic and diced shallot for 3 mins, then add the stock, cream, vinegar and mustard. Simmer for 5 mins, until thickened, then season with sea salt and a generous amount of black pepper.
  6. Wipe the steak frying pan clean and reheat with 1/2 tbsp oil. Cook the asparagus for 3 mins, until softened. Season with sea salt.
  7. Drain the potatoes, then stir through the whole herb leaves and 1/2 tbsp olive oil. Serve the steaks with the potatoes and asparagus; pour over the peppercorn sauce. Serve the tomato salad on the side.

  • 2 eggs
  • 2 garlic clove
  • 1 lemon
  • 2 rump steaks
  • 1 shallot
  • 160g baby spinach
  • 300g sweet potato
  • 1 handful of fresh thyme

Cooking Instructions

This recipe is nice and simple. Soon you’ll have a new favourite recipe Dad is sure to enjoy! Here’s what you need to do to create this scrumptious Hawksmoor dish you’ll never forget.

  1. Preheat the oven to 240C / fan 220C / gas mark 8. Peel and finely chop the garlic and shallot. Remove the thyme leaves from their stalks and chop.
  2. Halve the potato lengthways, place flat-side down and score deep lines into the rounded side (being careful not to cut through to the bottom). Place on a lined baking tray, drizzle with 1/2 tbsp oil and sprinkle with the garlic, thyme and half the shallot. Season with sea salt and black pepper, then bake for 30 mins, until crispy and cooked through.
  3. Heat a frying pan with 1/2 tbsp oil on a medium-high heat. Season the steaks with sea salt and black pepper, then place in the pan. Cook until golden brown (as a guide: 2-3 mins on each side for medium-rare or 4-5 mins on each side for well-done). Remove the steaks from the pan and leave to rest on a plate.
  4. Wipe the pan clean and reheat with 1 tsp oil on a medium heat. Add the remaining shallot and soften for 1 min, then add the spinach and cook for 2-3 mins, until wilted. Season with sea salt and black pepper. When ready to serve, halve the lemon and squeeze the juice over the spinach.
  5. Meanwhile, heat a separate frying pan with 1 tsp oil on a high heat. Fry the eggs until cooked to your liking.
  6. Serve the steaks topped with the fried eggs, and the sweet potato and spinach on the side.
