Instructions on How to Cook Healthy Asian Salmon Noodles

Not only are these Asian salmon noodles healthy and delicious, they take just over 15 minutes to cook and prepare! To start, follow these six simple instructions:

  1. Preheat the oven to 220C / fan 200C / gas mark 7. Boil a kettle. Fill a large pan with salted boiling water. Trim the broccoli and add to the pan, then cook on a high heat for 30 seconds. Drain and place in cold water, then set aside.
  2. Peel the carrots and, using a peeler, make long, thin strips. Finely slice the peppers. Peel the ginger and grate. Thinly slice the spring onions and chilli (remove the seeds for reduced heat).
  3. Make the dressing. Add the tamari, juice from the lime and maple syrup to a small bowl. Place the salmon skin-side down on a lined baking tray and bake for 10-12 mins, until cooked through. Set aside.
  4. Refill the pan used earlier with salted boiling water and bring to the boil. Scatter the noodles into the pan, stirring often to prevent sticking. Simmer for 4-5 mins, until cooked but still retaining a slight bite, then rinse briefly in cold water. Set aside.
  5. Heat a non-stick wok with 2 tbsp oil on a high heat. Stir-fry the peppers, mangetout, broccoli, ginger, half the chilli and half the spring onions for about 3-4 mins, until charred. Add the dressing and reduce slightly before adding the noodles and carrots. Toss together to heat through.
  6. Serve the noodles scattered with the remaining chilli and spring onions. Flake the salmon over top; sprinkle with the sesame seeds and seaweed salad.
